Recipe of the Week: Grilled Nectarines

P8190033 Recipe of the Week: Grilled Nectarines

Okay, I’m cheating a bit, this is way too simple to be called a recipe.  Maybe it’s the heat but I’m feeling lazy and not in the mood to spend a lot of time in the kitchen. Nectarines are in season right now and available all over. When choosing your nectarines for grilling choose some that are ripe but on the firm side, they stand up better on the grill. The best kind of yogurt to use is the home-made kind but if you don’t have the time or don’t know how you can use store-bought. “Denmark Plain” tastes the most like real, live yogurt. You can also make this dish more savory by switching out the yogurt for blue cheese and garnishing with walnuts.

Nectarines, halved and pitted
Grape seed oil
Homemade, full-fat yogurt
Maple syrup
Coarsely ground black pepper
A sprig of fresh mint

Heat grill. Brush cut side of nectarine with oil and place on the grill, cut-side down. Grill until caramelized. Turn over and grill until almost soft. Place nectarines on a platter, cut-side up and place a dollop of yogurt in the center of each nectarine, drizzle with maple syrup  and ground fresh pepper over the top.
